Description

This Amish Cinnamon Bread is a soft, moist, and slightly sweet quick bread packed with warm cinnamon flavor. Unlike traditional Amish Friendship Bread, this version requires no yeast or sourdough starter, making it easy to prepare in under two hours. With a rich cinnamon-sugar swirl and a golden, crackly crust, this bread is perfect for breakfast, dessert, or a cozy afternoon snack. Serve it warm with butter, drizzle with a simple glaze, or enjoy it plain—it’s delicious either way!

Ingredients

Scale

For the Bread Batter:

  • 3 ¾ cups cake flour (or all-purpose flour)
  • 3 cups granulated sugar
  • 1 tablespoon ground cinnamon
  • 1 ½ teaspoons baking powder
  • ¾ teaspoon baking soda
  • ¾ teaspoon salt
  • 3 large eggs
  • 1 ¾ cups whole milk
  • 1 ⅓ cups vegetable oil
  • 1 tablespoon vanilla extract

For the Cinnamon Sugar Swirl:

  • ⅓ cup granulated sugar
  • 1 tablespoon ground cinnamon

Instructions

Step 1: Prepare the Baking Pans

  1. Preheat your oven to 325°F (163°C).
  2. Grease two 9×5-inch loaf pans and line them with parchment paper for easy removal.

Step 2: Mix the Dry Ingredients

  1. In a large mixing bowl, whisk together the flour, sugar, cinnamon, baking powder, baking soda, and salt.

Step 3: Combine the Wet Ingredients

  1. In another bowl, whisk together the eggs, milk, vegetable oil, and vanilla extract until fully blended.

Step 4: Make the Batter

  1. Pour the wet ingredients into the dry ingredients and gently stir until just combined. Do not overmix, as this can make the bread dense.

Step 5: Create the Cinnamon Sugar Swirl

  1. In a small bowl, mix together the cinnamon and sugar for the swirl.
  2. Pour half of the batter into the prepared loaf pans. Sprinkle half of the cinnamon sugar mixture evenly over the batter.
  3. Pour the remaining batter on top and sprinkle the rest of the cinnamon sugar over the surface.
  4. Use a knife or skewer to gently swirl the cinnamon sugar into the batter, creating a marbled effect.

Step 6: Bake the Bread

  1. Place the loaf pans in the oven and bake for 60–65 minutes, or until a toothpick inserted in the center comes out clean.

Step 7: Cooling & Serving

  1. Let the bread cool in the pans for 15 minutes, then transfer to a wire rack to cool completely before slicing.
  2. Serve warm with butter, or drizzle with a vanilla glaze for an extra treat!
