  • 2 cups enchilada sauce (red or green)
  • 2 cups shredded cheddar cheese (or a Mexican cheese blend)
  • 1 cup Monterey Jack cheese, shredded
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon cumin (optional)
Optional Toppings:

  • ½ cup diced tomatoes
  • ¼ cup chopped green onions
  • ¼ cup chopped fresh cilantro
  • ½ cup sour cream or Greek yogurt
  • ½ cup guacamole

Instructions

Step 1: Preheat the Oven

  • Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.

Step 2: Assemble the Casserole

  • Spread ½ cup of enchilada sauce evenly on the bottom of the dish.
  • Arrange the frozen burritos in a single layer. Depending on their size, you may need to snugly fit them side by side.
  • Pour the remaining enchilada sauce evenly over the burritos, ensuring full coverage.

Step 3: Add Cheese and Bake

  • Sprinkle garlic powder, onion powder, and cumin over the burritos for extra flavor.
  • Generously top with cheddar and Monterey Jack cheese, ensuring an even layer.
  • Cover the dish with foil and bake for 25 minutes.

Step 4: Finish Baking

  • Remove the foil and bake uncovered for 10-15 more minutes, or until the cheese is golden and bubbly.

Step 5: Garnish and Serve

  • Let the casserole rest for 5 minutes before serving.
  • Top with diced tomatoes, green onions, fresh cilantro, sour cream, and guacamole as desired.
  • Serve warm and enjoy!
